With the documentation I added a preview image to https://ada.fsfe.org for the EN and DE version. But when the URL is added in short message platforms, the default logo picture is displayed. Can someone check, what I did wrong?

E.g. this OpenSuSE posting about Ada & Zangeman on Mastodon.

Twitter seems to have problems as well

even though there is a meta information especially for them with the twitter:image`. And their validator claims that the card is correct.

On the other hand, if I create a Tweet it works as expected

Tweet composed directly on Twitter containing the link, correctly processed

When I tried with Friendica, after pasting in the link to the Ada webpage the preview data for the attachment were fetched and correctly found (open graph or twitter header info).

Post preview on Friendica - correct image is fetched

And with Misskey it works as well.

However when looking at the above postings in my Mastodon timeline the open graph image is not shown (even though it is displayed in the other platforms network streams).

I don't think you did. Different vectors of receiving the information about "a link exists in the posting" on the different platforms seem to interpret the information differently even within the same platform.
